Ingredients: 8 slices of bread, 1 tbsp. butter or ghee, 3 cups sliced cabbage, 1 .5 cup sliced onion, 1 cup sliced carrot, 1 cup sliced bell peppers, 3-4 tsp dried oregano leaves, 2 tsp black pepper freshly grounded, 3 tbsp. tomato ketchup, 6-8 garlic cloves paste, 125gm grated mozzarella cheese, salt to taste
Preparation Time: 25 min
Recipe:
1. In a pan heat 1/2 tbsp. butter/ ghee. Add the onions and garlic paste to this. Sauté well until the onion turn translucent. Now add cabbage, carrot and bell peppers to this. Mix well. Add salt, black pepper and oregano to this and mix well again. Cover with a lid and allow cooking on medium gas for 5- 10 min with intermittent sautéing. Keep the cooked vegetables aside as toppings.
2. On a flat pan on medium- low flame, sprinkle a few drops of butter. put four slices of bread (or as much as you can accommodate). Apply a few drops of butter on the top side of each of the slice and turn them over. After 1/2 a min again turn the bread slices. Spread tomato ketchup on top of each of the slice (approx. 2-3 tsp). Now put a portion (approx. 1/8th) of the cooked veggies on each slice, spread out evenly and sprinkle grated mozzarella liberally. Cover this with lid and let the gas be low only.
3. In 3-4 min, the mozzarella starts melting and the pizza gets ready to be munched on hot with a dash of your favourite herbs or chilli!
