French beans, Bottle Guard and Carrot Salad

Ingredients: 1 and ½ cup chopped French beans (as shown in the pic below), ½  cup cubes of carrot, ½ cup cubes of bottle guard, ½ cup capsicum chopped in cubes, 1 ½ tsp ajwain i.e. carom seeds , 1 tsp oregano, 5- 6 rosemary sticks, salt to taste, 1 tsp olive oil


Preparation Time: 20 minutes




Recipe:

1.       Steam carrot and bottle guard separately as they take time to cook.

2.       Take a shallow pan and heat it. Add oil. Allow the oil to heat for half a minute and then add carom seeds.

3.       Add French beans and capsicum. Sprinkle little water and cover with a lid. Let the vegetables cook for 3- 4 minutes. Check if cooked (color changes to lighter tone). If no, sprinkle some more water, mix well and cover with lid again. Check after 2 min. Repeat if still not cooked well.

4.       Once beans and capsicum are cooked, add the carrot and bottle guard. Mix well.

5.       Add rosemary, oregano and salt. Cover with lid and heat on low gas for 3 minutes or so till you can smell the flavours of the spices.
Serve Hot!
