Mini Uttapam

Ingredients: 500gm idli batter (readily available at grocery stores), 1 finely chopped onion, 1 medium sized finely chopped capsicum, 1 small finely chopped tomato, 1 tbsp finely chopped coriander, 2 tsp cumin seeds, salt to taste, 1 tbsp oil/ ghee to sprinkle on the pan.

Preparation Time: 20 min

Recipe:

·         Take a dosa pan (non- stick) and heat it well.

·         Take the batter in a vessel. Add all the chopped vegetables and salt. Mix well. If the batter is thick, add 1 tbsp of water and mix well.

·         Sprinkle a tsp of oil on the pan. Use a small tbsp to pour a portion of the mixed batter on the pan and spread the mixture evenly to make a round mini uttapa. If poured properly, 3 at a time can be made.

·         Keep the gas at medium flame only and wait for 2 minutes. Sprinkle 2-3 drops of oil on each of the uttapam on the pan. If step one is done then, the edge of uttapa would leave the pan now.

·         Use a spatula to turn over the uttapam. Press each of the uttapam with the spatula from the top. Allow to cook for 2-3 minutes.

·         You can turn over then to check if they are all cooked well or not.

·         Serve mini uttapa hot with ketchup or idli chutney

Tips: Instead of the veggies used here, you can as well grate a carrot, chop two green chilli finely along with coriander to make mini uttapa. It tastes very good.
