Kiwi Strawberry Pudding

Ingredients: 5 slices of milk bread (unsweetened) with sides, 2 kiwis horizontally sliced, 7- 8 strawberries chopped fine, thick vanilla custard prepared of ½ litre milk, strawberry crush 1 tbsp, kiwi crush 3 tbsp, Dairy Milk silk grated, ½ cup of sweet lemon juice, 2 cups variety biscuits granulated unevenly (more of Marie).

Preparation Time: 10 min + 15 min to prepare custard

Recipe:

1.       Prepare the custard per the traditional way and allow it to cool down. If there are lumps, then just use a blender to smoothen it. Cut the sides of the bread slices.

2.       Take a platter (oval preferred). Place two slices of bread side by side to cover the base.

3.       Spread kiwi crush on the layer of bread evenly to cover the breads entirely. Now, sprinkle the biscuit granules to form an even layer over the kiwi crush. On this, add the sweet lime juice over this.

4.       Place two slices of bread as another layer over this. Then form a layer of chopped strawberries.

5.       Place the last slice of bread in the centre on the chopped strawberry as a ‘step – up’. Now, spread the custard on the bread – first evenly and then entirely to cover the entire platter.

6.       Over this, use the kiwi slices, grated chocolate and strawberry crush to make your own presentation.

7.       Allow it to set in refrigerator for half an hour.
Tips: Instead of a platter, you can as well set it as a pudding in individual pudding cups. Here, the tanginess of strawberries, kiwi and sweet lemon is balanced with the sweetness of the custard and the crushes used, not to forget the chocolate!
