#vegvermicelli
Ingredients: 2 ½ cups
vermicelli (or wheat sevai), 1 onion (chopped in vertical slices), 1 medium
carrot (cut 1 inch long), 1/2 capsicum (cut 1 inch long), ¼ cup peas, 1 tbsp
ghee/ oil, 1 tsp mustard seeds, 2 tsp white urad dal/ lentils, 2 tsp turmeric
powder, ½ tsp red chilli powder, salt to taste, 1 tbsp chopped coriander, a
lemon, 1 litre water.

Recipe:
1. Add the water to
a cooking vessel and heat it to the boiling point.
2. In the meantime,
take a pan and heat it. Add ghee/ oil to it and heat for seasoning. Now add
mustard seeds, urad dal and wait till urad dal turns light golden.
3. Now add onion.
Allow it to turn golden at medium gas. Stir intermittently. Now add peas,
carrots and capsicum to this. Stir them all well. Parch for 3 min.
4. Now add vermicelli
and parch on medium gas only for 5 minutes while stirring continuously (until
it turns golden).
5. Now add water to
this, followed by salt, turmeric powder and red chilli powder. Turn the gas on
high and cover with lid to allow cooking faster.
6. Check after 3
min. If still uncooked and all dry, then add 1 or 2 cups more water. Cook on
medium gas for 2-3 more min. Once cooked, turn it off and remove the lid.
7. Serve it hot with
lemon and garnished with chopped coriander!
Tips:
You can as well use the rice vermicelli.
