Chocolate cake

Ingredients: 1.5 cup maida or all purpose flour, ¼ cup coco powder, 1 cup unsalted butter, 1 cup thickened curd, 1 tsp baking powder, 1 cup powdered sugar, ½ tsp baking soda, 4-5 walnuts roasted and crushed
Preparation time: 30 min
Recipe:
1. Mix the dry ingredients except for baking powder and soda. In a mixer pot, add the butter and sugar and grind well. Then add curd and mix well again. Add the dry ingredients in tranches to this and keep mixing to form batter.
2. Add baking powder and soda. Mix it well again. Check the consistency to be free flowing by raising the spoon up in the bowl. If thick, add little milk to improve consistency.
3. Grease a pot and dust it. Put the batter in this and bake it in over for 25 min at 200 degrees. You can also keep it in pressure cooker by removing the whistle and the ring of the lid and placing the pot in the cooker (for 25 min).
4. Check if the cake is baked properly using a toothpick. After inserting in the centre of the cake, if it comes out clean then baking is through; else bake for some more minutes.
5. The cake is ready!

Dates cake

Ingredients: 1.5 cup maida or all purpose flour, 1 cup milk powder, 1 cup fresh cream/ malai, 1 tsp baking powder, 1 cup powdered sugar, ½ tsp baking soda, ½ cup milk, 4-5 dates diced, 1 tsp vanilla essence

Preparation time: 30 min

Recipe:

1. Mix the dry ingredients except for baking powder and soda. Add malai i.e. cream to this and ¼ cup milk. Also add the vanilla essence. Mix it well – using mixer pot or churner.

2. Add baking powder and soda and ¼ cup milk. Mix it well again. Check the consistency to be free flowing by raising the spoon up in the bowl.

Hide N Seek Cake/ Chocolate Cake

Ingredients: 2 Hide N Seek Biscuit packets, 2 regular Eno sachets, 1 tsp baking powder, 1 small tbsp oil, 2 cups of milk, 2 small tbsp sugar, butter/ ghee and flour to grease and dust
Preparation Time: 12 min






Recipe:

1. Crush the biscuits with hand and grind it in mixer pot to powder.

2. Take a vessel, pour the biscuit powder to it, add all the dry ingredients but for milk. Mix all well. Now add milk slowly while continuously stirring, half cup at a time (N.B. Not all milk will be required). Mix it till the batter of the cake has apt consistency. Check it with the spoon your mixing with. If the batter drops down, then the batter is ready.

3. Pour the batter in the baking vessel which is already greased and dusted already.

4. Microwave directly for 4 minutes first. Check. The batter starts baking. If it leaves the vessel, then the cake is done. Else, put it back for a minute or so.

5. The cake is ready. Take it out and after 5 min turn it upside down on a flat sieve or wired ring.

Tips: * add roasted walnuts to the cake while baking, it tastes yum.

*For icing, take 6-7 cubes of dairy milk silk 2 tsp of butter. Mix it and melt it through double boiler and spread it over the cake.

*For vanilla flavour, use Goodday biscuits.
*Serve hot cake with chilled thick custard or vanilla ice cream. A great combo!
