Tadka

Ingredients: 15- 20 garlic cloves crushed or sliced, 5-6 red dry chillies, 1.5 tbsp cumin seeds, 2 heaped tsp dried mango powder (amchur), 2 tsp of red chilli powder, salt to taste, 1.5 cups of oil

Preparation Time: 15 min

Recipe:

1.       Heat the oil in a deep pan/ kadhai strongly till fumes appear.

2.       Switch off the gas, after a minute add the cumin seeds. Wait till they change color and become crisp. Then add the red chillies while stirring the oil, followed by garlic. Wait till the garlic changes color and then add all the remaining ingredients i.e. spices.

3.       The tadka is ready

Tips: Keep stirring the mixture while you add ingredients so that they do not get burnt. Heating the oil properly is important to ensure that all the ingredients become crisp and crunchy.
