Tangy chutney of lime

Ingredients: 1 tbsp of lime juice, 1/2 tbsp of sugar (castor or bhura), 2 tsp red chilli powder, salt to taste, 2 tsp cumin seeds

Preparation Time: 2 min (serves 4- 6)

Recipe:
1. Take a glass bowl and add the lime juice to it. Add sugar and stir well till it mixes entirely. 

2. To this, add the red chilli powder, cumin seeds and salt to taste. Mix well.

3. Have it as a dip with sabudana wada, rajgira paratha, chillas and the list goes on!

Tips:Many a times, you fall short of the tangy sweet lime pickle. This although is not a pickle but gives a lovely tangy taste if all the ingredients are used in right amounts and combined properly. It is instant and can be combined with many Indian recipes...

Thesa/ Thecha/ hari mirch chutney

Ingredients: 1/2 tbsp oil, 2 tsp cumin seeds, 8-10 green chillies (preferably light green as they are medium spicy but if you like very hot then you may opt for #lavangi #mirchi as well), 1 tbsp of roasted and skinned peanuts, 1 tbsp of fresh coriander, 4-5 garlic cloves, salt to taste  

Preparation Time: 10 min (serves up to 15)

Recipe:
 1. Heat a pan or kadhai and add the oil to it. To this, add the cumin seeds, garlic cloves and green chilly. Parch it for 3-4 min on medium flame till the color of the chilly changes.

2. Turn of the gas and while still hot, add the coriander leaves to it. Let the mixture cool a bit (say for a minute or two)

3. Shift the mixture to a mixer pot and grind it to coarse paste (as shown in the pic). Instead of mixer pot, you may also beat the mixture with mortar and pestle (i.e. khalbatta). The latter gives an awesome taste but is time consuming. 

4. To the paste, add salt to taste and use it as a supplement with #jowar #bhakris #dashmi #parathas

Tip: If you eat less spicy food, it is recommended to use only 2-3 green chillies and in its lieu use a green capsicum.

Niger seeds/ karaala chutney

Ingredients: 100gms Indian Niger Seeds/ Karaala, 8- 10 cloves of garlic, 1 tbsp. of groundnuts, 1/2 tbsp. cumin seeds, 1 tbsp. kokam, 6-8 red dry chillies, salt to taste
 
Preparation Time: 15 min
 
Recipe:
 
1. Heat a pan and add all the ingredients except for salt and kokam. Parch for 5-8 min on medium gas.
 
2. Remove from gas and wait for 4-5 min to cool down. Then add kokam and salt to it. Add it to a mixer pot and grind to powder.
 
3. You can store this chutney for 15- 20 days as well. Tastes best with Indian breads like Dashmi, jowari ki roti or paratha. 2 tsp of chutney with a tsp of oil works wonders in case of Jowari ki roti.
 
Tips:
Some like sweetened chutney. You may add jiggery accordingly.

Groundnut Chutney

Groundnut Chutney

Ingredients: 200gm groundnut/ moongphali, 1 tbsp cumin seeds,  10- 12 garlic cloves, salt to taste
Preparation Time: 10 min




Recipe:

1.       Parch the groundnuts till they become brown (or dark) i.e. typically for 10 minutes on medium gas and leave skin. Remove the skin by following traditional method.

2.       Take all the ingredients and Grind them together with groundnuts
The chutney is ready!

Ingredients: 100gm jawas/ flax seeds, 8-10 cloves of garlic, 7 red dry chillies, 2 tsp of cumin seeds, salt to taste




Preparation Time: 8 min
 

Recipe:

1.       Take all the ingredients and broil/ parch them in a hot pan for 5 min at medium gas

2.       Grind all the ingredients together
The chutney is ready!
 
 Tips: You can add a tsp of oil while eating this chutney with jowari roti or bhakri!
